Rhubarb Lemongrass Refresher
A light and refreshing beverage, and a list of my favorite rhubarb recipes from Substack this season

We had a week of summer in May, unheard of here in Minnesota. Days were sunny and warm, toes in the grass with sun-kissed faces. The rhubarb shot up in the heat of the day, fanning out wide, unfurling before our eyes. We checked in on the patch day after day, waiting for the length to be just right to pick. The day arrived on Mother’s Day, and we picked a basket full and dreamed of what we would make, bake, pickle, or brew.

This beverage is incredibly delicate and light, a perfect drink to sip on a warm spring day. The rhubarb is sweetened just a touch to bring out its flavor, while still holding onto its tartness. The lemongrass enhances the green and grassy nature of rhubarb in the best way, adding a flavor dimension to the simple beverage. The drink is the lightest shade of pink, reminiscent of pink lemonade, this being a playful twist on the original. Enjoy along any of the rhubarb delights below.
Rhubarb & Lemongrass Refresher
4 c. Rhubarb
6 c. Water
2 Stalks of Lemon Grass, 6” or so long
1 Tbs. Sugar (or to taste)
Bring rhubarb, water and sugar to a gentle simmer over medium-high heat for five minutes.
Remove the pot from the heat, add the lemongrass and cover. Let steep for 1 hour.
Strain through a cheese cloth-line strainer and chill. Enjoy over ice.
